7 COOLING MEALS for hot summer days


Hi Reader!

Shade and fans (set on high!) are my best friends this week as the temperatures spike around here.🔥 In the middle of summer, I avoid heating up the kitchen at all costs and turn to cooling, refreshing meals.

Salads and sandwiches to the rescue! From pasta salads to no-cook recipes, here are some of my hot-weather recipes. Most of these work well for potlucks and picnics, too.

  1. Chopped Broccoli Salad with Tahini Dressing - Feel free to add cooked chicken or shrimp to this vegetarian salad for the meat lovers in your family.

  3. Rice Salad with Tuna - It's ideal for meal prep, plus it's packed with chopped vegetables and tossed with lemon vinaigrette.

  5. Shrimp Salad Sandwich - Succulent bay shrimp, creamy avocado, tangy capers, and crunchy bell peppers are all packed into this tasty sandwich.🍤
  6. Thai Chicken Salad - One reader said, "My new favourite salad. I've never been so sad to reach the end of a bowl! Definitely making this again and again." ❤️
  7. Herb Veggie Lentil Salad - This is a fantastic make-ahead salad. The lemon juice and herbs meld and get better over time.
